Smothered Pork Chop and Scalloped Potato Casserole

For the Smothered Pork Chops:

4 bone-in pork chops (about 1-inch thick)

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

2 tablespoons olive oil

1 medium onion, sliced

3 cloves garlic, minced

2 cups low-sodium chicken broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 cup heavy cream

1 teaspoon dried thyme

1/2 teaspoon paprika

Fresh parsley for garnish

For the Scalloped Potato Casserole:

4 large russet potatoes, peeled and thinly sliced (about 1/8 inch thick)

1 cup heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

2 tablespoons unsalted butter

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon nutmeg

1/2 teaspoon garlic powder

1/2 cup grated Parmesan cheese

Instructions
 

Prepare the Pork Chops:

    - Season both sides of the pork chops with salt, pepper, garlic powder, and onion powder.

      - In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add pork chops and sear for 4-5 minutes per side until golden brown. Remove chops and set aside.

        Make the Gravy:

          - In the same skillet, add sliced onions and cook for about 3-4 minutes until softened. Add minced garlic and sauté for another minute.

            - Stir in chicken broth, Worcestershire sauce, Dijon mustard, heavy cream, thyme, and paprika. Bring to a simmer.

              Combine & Cook:

                - Return the pork chops to the skillet, spooning some of the gravy over them. Cover and reduce heat to low. Cook for about 20-25 minutes, or until the pork is cooked through and tender.

                  Prepare the Scalloped Potatoes:

                    - Preheat the oven to 375°F (190°C).

                      - In a large mixing bowl, whisk together heavy cream, milk, salt, black pepper, nutmeg, and garlic powder. Layer half of the sliced potatoes in a greased 9x13 inch baking dish.

                        - Pour half the cream mixture over the potatoes, sprinkle with half of the cheddar cheese, and add the remaining potato slices. Top with the rest of the cream mixture, covering all potatoes.

                          - Dot the top with butter and sprinkle with the remaining cheddar cheese and grated Parmesan.

                            Bake the Casserole:

                              - Cover the casserole with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the top is golden and bubbly.

                                Serve it Up:

                                  - Once both dishes are ready, serve the smothered pork chops over a generous scoop of scalloped potatoes. Garnish with fresh parsley for a pop of color and flavor.
