For the Cookie Base:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

1 tsp ground cinnamon

For the Apple Filling:

4 cups tart apples (like Granny Smith), peeled and sliced

½ cup brown sugar

1 tsp ground cinnamon

1 tbsp lemon juice

1 tbsp cornstarch

For Topping:

2 tbsp sugar

1 tsp ground cinnamon

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

    Prepare the Apple Filling: In a large mixing bowl, combine the sliced apples, brown sugar, 1 tsp cinnamon, lemon juice, and cornstarch. Toss until the apples are well-coated. Pour this mixture into the prepared baking dish and spread it evenly.

      Make the Cookie Base: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

        Cream Butter and Sugar: In a mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy (about 2-3 minutes).

          Add Egg and Vanilla: Mix in the egg and vanilla extract until well combined.

            Combine Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients. Stir in the ground cinnamon until just combined. Do not overmix.

              Top the Apples: Using a spoon or your hands, drop spoonfuls of the cookie batter over the apple filling. Spread it gently, but it's okay if some of the apples are still peeking through.

                Prepare the Topping: In a small bowl, mix together the 2 tbsp of sugar and 1 tsp of ground cinnamon. Sprinkle this mixture evenly over the cookie batter.

                  Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the cobbler is golden brown and bubbly.

                    Cool and Serve: Allow the Snickerdoodle Cobbler to cool for about 10-15 minutes before serving. Serve warm, optionally with a scoop of vanilla ice cream on top!
