1 cup sourdough discard (at room temperature)

1 ½ cups all-purpose flour (plus extra for dusting)

½ teaspoon baking powder

½ teaspoon salt

2 tablespoons olive oil (or melted butter)

⅓ to ½ cup warm water (as needed)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, and salt until well blended.

    Combine Wet Ingredients: In a separate bowl, mix the sourdough discard with the olive oil.

      Incorporate Mixtures: Pour the sourdough mixture into the dry ingredients. Stir until combined.

        Add Water Gradually: Begin adding warm water, a little at a time, until a dough forms. It should be soft, but not sticky. Knead briefly until smooth.

          Rest the Dough: Cover the bowl with a damp cloth and let the dough rest for about 30 minutes. This helps to relax the gluten.

            Divide the Dough: After resting, divide the dough into 8 equal portions and roll them into balls.

              Roll Out Tortillas: On a floured surface, take one ball at a time and roll it out into a thin circle (about 8 inches in diameter). Keep the edges slightly thicker for better handling.

                Cook the Tortillas: Heat a non-stick skillet or cast-iron pan over medium-high heat. Once hot, place one tortilla in the pan. Cook for about 30 seconds, or until you see bubbles forming; flip and cook for an additional 30 seconds. The tortilla should have light golden spots.

                  Keep Warm: Transfer the cooked tortilla to a clean kitchen towel and cover to keep warm while you repeat with the remaining dough.
