Ingredients

400g spaghetti

6 cloves garlic, thinly sliced

100ml extra virgin olive oil

1 tsp red pepper flakes (adjust to taste)

1/2 cup fresh parsley, chopped

Salt, to taste

Freshly grated Parmigiano-Reggiano cheese (optional)

Zest of 1 lemon (optional)

Instructions

Boil the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Once cooked, reserve 1 cup of pasta water, then drain the spaghetti.

Prepare the Garlic Oil: In a large skillet over medium heat, add the extra virgin olive oil. Once hot, add the thinly sliced garlic and red pepper flakes. Sauté for about 2-3 minutes, stirring frequently until the garlic turns golden and fragrant, being careful not to let it burn.

Combine Pasta and Sauce: Add the drained spaghetti directly into the skillet with the garlic oil. Toss well to coat the spaghetti evenly with the oil and garlic. If the pasta seems dry, gradually add reserved pasta water until you reach the desired consistency.

Add Freshness and Flavor: Remove the skillet from heat and stir in the chopped parsley. Season with salt to taste, and if desired, add the lemon zest for a refreshing touch.

Serve: Plate the spaghetti and if desired, sprinkle with freshly grated Parmigiano-Reggiano cheese. Enjoy your simple but flavorful Spaghetti Aglio e Olio!
