Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce

12 oz spaghetti

2 cups fresh spinach, chopped

1 cup sun-dried tomatoes, packed in oil, drained and chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves, for garnish (optional)

Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

    Sauté the Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes, allowing their flavors to meld with the garlic.

        Prepare the Cream Sauce: Reduce heat to low, then slowly pour in the heavy cream, stirring gently to combine. Add the Italian seasoning, salt, and pepper. Allow the sauce to simmer for about 5 minutes until it begins to thicken.

          Incorporate Spinach and Parmesan: Add the chopped spinach to the skillet. Cook until wilted, about 2 minutes. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
