1 medium spaghetti squash

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup marinara sauce (store-bought or homemade)

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: Cut the spaghetti squash in half lengthwise. Scoop out the seeds using a spoon. Drizzle the inside of the squash with olive oil and season with garlic powder, Italian seasoning, salt, and black pepper.

      Roast the Squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 40-50 minutes, or until the flesh is tender and easily shredded with a fork.

        Shred the Squash: Remove the squash from the oven and let it cool for a few minutes. Using a fork, gently scrape the flesh to create spaghetti-like strands.

          Assemble the Boats: In a large bowl, combine the shredded squash with marinara sauce, and half of the mozzarella cheese. Mix until well incorporated.

            Fill the Squash Boats: Divide the mixture evenly among the roasted squash halves. Top each boat with the remaining mozzarella and Parmesan cheese.

              Bake Again: Return the filled boats to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly.
