Spicy Buffalo Chicken Flatbread

2 large flatbreads (store-bought or homemade)

1 cup cooked chicken, shredded

1/2 cup buffalo wing sauce (adjust to taste)

1 tablespoon olive oil

1/2 cup red onion, thinly sliced

1/2 cup celery, diced

1 cup mozzarella cheese, shredded

1/4 cup blue cheese crumbles (optional)

1/4 cup fresh cilantro or parsley, chopped

Salt and pepper to taste

1/2 cup ranch or blue cheese dressing, for drizzling

Preheat Your Oven: Preheat your oven to 425°F (220°C).

    Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken with the buffalo wing sauce. Adjust the spiciness by adding more sauce if desired.

      Sauté Vegetables: Heat the olive oil in a skillet over medium heat. Add the sliced red onions and cook for about 3-4 minutes until softened. Stir in the diced celery and sauté for an additional 2-3 minutes. Season with a pinch of salt and pepper. Remove from heat.

        Assemble Flatbreads: On a baking sheet, lay out the flatbreads. Evenly spread the buffalo chicken mixture over each flatbread. Then, sprinkle the sautéed onions and celery mixture on top. Follow with a generous layer of mozzarella cheese and sprinkle with blue cheese crumbles if using.
