1 medium head cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon ground cumin

¼ teaspoon cayenne pepper (adjust to taste)

Salt, to taste

Freshly ground black pepper, to taste

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

¼ cup fresh cilantro, chopped

1 avocado, sliced

½ cup crumbled feta cheese (or vegan alternative)

½ cup sour cream or Greek yogurt (optional)

Lime wedges, for serving

Instructions
 

Prepare the Cauliflower:

    - In a large mixing bowl, combine the cauliflower florets, olive oil, smoked paprika, chili powder, cumin, cayenne pepper, salt, and black pepper. Toss until the florets are evenly coated.

      Air Fry the Cauliflower:

        - Preheat your air fryer to 400°F (200°C).

          - Add the seasoned cauliflower to the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.

            - Cook for 12-15 minutes, shaking the basket halfway through, until the cauliflower is crispy and golden brown.

              Warm the Tortillas:

                - Lightly toast the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and pliable.

                  Assemble the Tacos:

                    - For each taco, place a generous amount of the air-fried spicy cauliflower on a tortilla.

                      - Top with shredded red cabbage, fresh cilantro, avocado slices, and crumbled feta cheese.

                        - Drizzle with sour cream or Greek yogurt, if using.

                          Serve:
