Spicy Green Chili Beef Quesadillas

1 lb ground beef

1 cup fresh green chilies, diced (such as poblano or jalapeño)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper, to taste

2 cups shredded cheese (cheddar or Monterey Jack)

4 large flour tortillas

2 tbsp olive oil (for cooking)

Fresh cilantro, chopped (for garnish)

Sour cream or salsa (for serving)

Instructions
 

Cook the Beef Mixture:

    Heat a large skillet over medium heat and add the olive oil. When hot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Add Ground Beef and Spices:

        Increase the heat to medium-high and add the ground beef to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

          Incorporate Green Chilies and Spices:

            Stir in the diced green chilies, cumin, smoked paprika, chili powder, salt, and pepper. Combine well and cook for another 2-3 minutes, allowing the flavors to meld. Remove from heat and set aside.

              Assemble Quesadillas:

                On one half of each tortilla, spread a generous portion of the beef mixture. Top with shredded cheese, then fold the tortilla over to encase the filling.

                  Cook Quesadillas:

                    Wipe the skillet clean and add a light drizzle of olive oil. Place the folded quesadillas in the skillet (2 at a time, depending on size) and cook on medium heat for about 3-4 minutes, until the underside is golden brown and crispy. Carefully flip and cook the other side for another 3-4 minutes until browned and the cheese is melted.

                      Serve:

                        Remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and serve warm with a sprinkle of chopped cilantro, alongside sour cream or salsa.
