Spicy Grilled Corn Quesadillas

2 cups fresh corn kernels (about 4 ears of corn)

1 medium red bell pepper, diced

1 small jalapeño, minced (seeds removed for less heat)

1/2 cup red onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1/4 teaspoon cayenne pepper (adjust for spice level)

Salt and black pepper, to taste

1 cup grated Monterey Jack cheese (or cheese of your choice)

1 cup grated sharp cheddar cheese

8 large flour tortillas

Olive oil, for brushing

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Corn Mixture: In a skillet over medium heat, add a drizzle of olive oil. Once hot, sauté the red onion for 2-3 minutes until it softens. Add the minced garlic, diced jalapeño, and red bell pepper. Cook for another 3-4 minutes.

    Add Corn and Spices: Stir in the fresh corn kernels and continue to sauté until the corn is tender (about 5-7 minutes). Season the mixture with smoked paprika, cumin, chili powder, cayenne pepper, salt, and black pepper. Mix well and remove from heat. Let it cool slightly.

      Assemble Quesadillas: On one half of each tortilla, sprinkle a layer of Monterey Jack and cheddar cheese. Spoon a generous amount of the corn mixture over the cheese. Top with another layer of cheese and fold the tortilla in half.

        Grill the Quesadillas: Preheat a grill pan or outdoor grill over medium-high heat. Brush the outside of each folded quesadilla lightly with olive oil. Grill for 3-4 minutes per side until the tortillas are golden and crispy, and the cheese is melted.
