Ingredients
  

1 pound large shrimp, peeled and deveined

3 tablespoons honey

2 tablespoons soy sauce

2 tablespoons sriracha (adjust for spice level)

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh ginger, grated

1 cup jasmine rice

2 cups water or broth (for cooking rice)

2 cups mixed vegetables (bell peppers, broccoli, snap peas)

2 green onions, sliced

Sesame seeds, for garnish

Salt and pepper, to taste

Lime wedges, for serving

Instructions
 

Cook the Rice:

    - In a medium saucepan, combine the jasmine rice and water (or broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

      Prepare the Sauce:

        - In a small bowl, whisk together honey, soy sauce, sriracha, minced garlic, and grated ginger. Set aside.

          Sauté the Vegetables:

            - In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed vegetables and sauté for about 5 minutes or until tender but still crisp. Season lightly with salt and pepper. Remove from the skillet and set aside.

              Cook the Shrimp:

                - In the same skillet, add the remaining tablespoon of olive oil. Add the shrimp and cook for 2-3 minutes on one side until pink. Flip the shrimp, then pour the honey garlic sauce over them. Cook for an additional 1-2 minutes, stirring to coat the shrimp in the sauce until they are fully cooked and glossy.

                  Assemble the Bowls:

                    - Fluff the jasmine rice with a fork and divide it among four bowls. Top with the sautéed vegetables and honey garlic shrimp.

                      Garnish and Serve:

                        - Sprinkle sliced green onions and sesame seeds on top. Serve with lime wedges for an extra burst of flavor.
