Spicy Peach Bars

For the crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup unsalted butter (cold and cubed)

1 teaspoon vanilla extract

¼ teaspoon salt

1 tablespoon cold water (as needed)

For the filling:

3 cups fresh peaches (peeled, pitted, and diced)

½ cup brown sugar

1 tablespoon cornstarch

1 teaspoon cinnamon

¼ teaspoon nutmeg

½ teaspoon cayenne pepper (adjust to taste)

1 tablespoon lemon juice

1 teaspoon vanilla extract

For the topping:

1 cup old-fashioned rolled oats

½ cup almond flour (or finely ground nuts)

½ cup brown sugar

1 teaspoon ground cinnamon

¼ cup unsalted butter (melted)

Instructions
 

Preheat your oven: Set it to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

    Prepare the crust: In a mixing bowl, combine the flour, granulated sugar, and salt. Add in the cold, cubed butter and mix until the mixture resembles coarse crumbs. Stir in the vanilla extract. If the mixture is too dry, add cold water, one tablespoon at a time, until the dough comes together.

      Press the crust into the pan: Spread the dough evenly into the prepared baking dish, pressing down firmly. Bake in the preheated oven for 15 minutes or until lightly golden.

        Make the peach filling: In a large bowl, combine the diced peaches, brown sugar, cornstarch, cinnamon, nutmeg, cayenne pepper, lemon juice, and vanilla extract. Toss everything until the peaches are evenly coated.

          Assemble the bars: Once the crust is done baking, remove it from the oven and pour the peach filling over the crust, spreading it evenly.

            Prepare the topping: In another bowl, mix the rolled oats, almond flour, brown sugar, and cinnamon. Pour in the melted butter, stirring until it is well combined. Crumble the topping evenly over the peach filling.

              Bake the bars: Return the dish to the oven and bake for an additional 30-35 minutes or until the topping is golden brown and the filling is bubbling.

                Cool and cut: Allow the bars to cool in the pan for at least 20 minutes before slicing into squares.
