Spicy Sichuan Tofu Stir Fry

1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons vegetable oil

1 cup bell peppers (red and green), sliced

1 cup broccoli florets

1 medium onion, sliced

3 cloves garlic, minced

1 inch ginger, grated

2 tablespoons Sichuan peppercorns

3 tablespoons soy sauce

2 tablespoons chili bean paste (doubanjiang)

1 tablespoon rice vinegar

1 tablespoon sugar

1 teaspoon sesame oil

2 green onions, chopped (for garnish)

Cooked jasmine or brown rice (for serving)

Instructions
 

Prepare Tofu: Press the tofu for at least 30 minutes to remove excess moisture, then cut it into cubes. Pat dry with paper towels.

    Heat Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.

      Fry Tofu: Carefully add the tofu cubes to the hot oil. Fry them for about 5-7 minutes or until golden brown on all sides. Remove the tofu from the pan and set aside.

        Cook Aromatics: In the same pan, add the Sichuan peppercorns and toast for about 30 seconds until fragrant. Add minced garlic and grated ginger, cooking for another minute until aromatic.

          Sauté Vegetables: Add sliced onion, bell peppers, and broccoli to the pan. Stir-fry for 3-4 minutes or until the vegetables are tender yet crisp.

            Combine Ingredients: Return the fried tofu to the pan. Add chili bean paste, soy sauce, rice vinegar, and sugar. Toss everything together to coat the tofu and veggies evenly.

              Finish Stir-Fry: Drizzle sesame oil over the stir-fry and cook for another 2-3 minutes, allowing flavors to meld.

                Garnish and Serve: Remove the pan from heat, garnish with chopped green onions, and serve hot over cooked jasmine or brown rice.
