4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1/2 cup cream cheese, softened

1/4 cup sour cream

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 teaspoons garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the oven to 375°F (190°C). Prepare a baking dish by lightly greasing it with cooking spray or a drizzle of olive oil.

    Prepare the filling: In a large mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, mozzarella cheese, garlic powder, and onion powder. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste.

      Prepare the chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper. Gently pound them to an even thickness using a meat mallet or rolling pin (about 1/2 inch thick).

        Stuff the chicken: Take a generous amount of the spinach and artichoke mixture and place it in the center of each chicken breast. Carefully fold the edges of the chicken over the filling and secure with toothpicks or tie with kitchen twine to hold together.

          Sear the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side, or until golden brown.
