Spinach Garlic Meatballs

Ingredients
  

1 lb (450g) ground beef or turkey

1 cup fresh spinach, finely chopped

4 cloves garlic, minced

½ cup breadcrumbs (Italian or plain)

1/4 cup grated Parmesan cheese

1 large egg

2 tbsp fresh parsley, chopped

1 tsp dried oregano

1 tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional for a spicy kick)

1/4 cup milk (or vegetable broth for a lighter option)

1 jar marinara sauce (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Spinach: In a skillet over medium heat, add a splash of olive oil and sauté the minced garlic until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, approximately 2-3 minutes. Remove from heat and let cool slightly.

      Mix Ingredients: In a large mixing bowl, combine the ground meat, cooked spinach and garlic mixture, breadcrumbs, grated Parmesan cheese, egg, parsley, oregano, salt, pepper, and red pepper flakes (if using). Pour in the milk and mix until everything is well incorporated but do not overmix.

        Form Meatballs: With clean hands, scoop out portions of the mixture (about 1.5 inches in diameter) and roll them into meatballs. Place them on the prepared baking sheet, making sure to leave space between each meatball.

          Bake: Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and reach an internal temperature of 160°F (70°C).

            Serve: While the meatballs are baking, heat the marinara sauce in a saucepan over low heat. Once the meatballs are done, serve them over pasta, in subs, or simply with the marinara sauce and a sprinkle of fresh parsley on top.
