Spinach Mushroom Stuffed Pasta Shells

20 large pasta shells

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, diced

5 ounces fresh spinach, chopped

15 ounces ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon Italian seasoning

Salt and pepper to taste

3 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta shells according to the package directions until al dente. Drain and set aside to cool slightly.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Stir in the minced garlic and continue cooking for another minute. Add the diced mushrooms and cook for about 5-7 minutes until they are tender and any moisture has evaporated. Stir in the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

      Prepare the Filling: In a mixing bowl, combine the cooked mushroom and spinach mixture with the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Shells: Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce across the bottom of a 9x13-inch baking dish. Using a spoon, fill each cooked pasta shell with a generous amount of the filling mixture and place them seam-side up in the prepared baking dish.

          Add Sauce and Cheese: Once all shells are stuffed, pour remaining marinara sauce over the shells, making sure to cover them well. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is melted and bubbly.
