2 boneless ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper, to taste

4 slices of crusty bread (like ciabatta or sourdough)

4 ounces roasted red peppers, sliced

4 ounces fresh mozzarella cheese, sliced

1 cup arugula or baby spinach

Balsamic glaze (optional, for drizzling)

Instructions
 

Marinate the Steaks: In a small bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt and pepper. Rub this mixture all over the ribeye steaks. Let them marinate for at least 30 minutes at room temperature (up to 2 hours in the fridge for deeper flavor).

    Cook the Steaks: Preheat a grill or skillet over medium-high heat. Once hot, add the marinated steaks. Cook for 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let rest for about 5 minutes before slicing.

      Toast the Bread: While the steaks are resting, lightly toast the slices of bread on the grill or in a toaster until golden brown.

        Assemble the Sandwiches:

          - Slice the rested steaks against the grain into thin strips.

            - On the bottom half of each toasted slice of bread, layer the steak strips, followed by roasted red peppers, and mozzarella cheese.

              - Top with a handful of arugula or baby spinach.
