4 medium zucchinis

1 pound cooked chicken, shredded (rotisserie chicken works great)

1 cup BBQ sauce (choose your favorite brand or homemade)

1 cup shredded mozzarella cheese

1/2 cup corn (canned or frozen, thawed)

1/2 cup black beans, drained and rinsed

1/4 cup red onion, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro or green onion, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchinis: Cut the zucchinis in half lengthwise and scoop out the center seeds to create boats. Leave a bit of the zucchini flesh for added flavor.

      Cook Chicken Mixture: In a medium bowl, combine the shredded chicken, BBQ sauce, corn, black beans, red onion, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until all ingredients are thoroughly combined.

        Fill Zucchini Boats: Place the zucchini halves in a baking dish, cut side up. Spoon the BBQ chicken mixture generously into each zucchini boat, pressing down slightly to pack the filling.

          Add Cheese: Sprinkle the shredded mozzarella cheese evenly over the stuffed zucchini boats.

            Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
