1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/2 cup finely chopped onion

1/2 cup grated carrots

1/4 cup chopped fresh parsley

2 cloves garlic, minced

2 large eggs

1/4 cup milk

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon smoked paprika

1/2 teaspoon onion powder

1 cup BBQ sauce (plus more for glazing)

Optional: sliced jalapeños for topping

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin lightly or line with muffin liners.

    Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef and ground pork. Add in the breadcrumbs, chopped onion, grated carrots, parsley, garlic, eggs, milk, Worcestershire sauce, Dijon mustard, salt, pepper, smoked paprika, and onion powder. Mix well until all ingredients are evenly combined.

      Shape the Muffins: Using your hands (or a cookie scoop for even portions), divide the meat mixture into 12 equal portions. Shape each portion into a muffin shape and place them into the prepared muffin tin.

        Add BBQ Sauce: Brush a generous layer of BBQ sauce over the top of each meatloaf muffin. You can reserve some sauce for serving as well.

          Bake: Place the muffin tin in the preheated oven and bake for about 25-30 minutes, or until the muffins are cooked through and reach an internal temperature of 160°F (70°C).

            Glaze and Broil: For added stickiness, after baking, switch the oven to broil. Brush on a bit more BBQ sauce on top of each muffin and broil for an additional 2-3 minutes until caramelized and bubbly. Keep an eye on them to avoid burning!

              Serve: Carefully remove the meatloaf muffins from the tin. If desired, top with sliced jalapeños for an extra kick. Serve with extra BBQ sauce on the side for dipping.
