Ingredients

2 cups cream cheese, softened

1 cup Greek yogurt

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced (plus extra for topping)

1/2 cup graham cracker crumbs

1/4 cup mini chocolate chips (optional)

A pinch of salt

Zest of 1 lemon (optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the softened cream cheese, Greek yogurt, powdered sugar, vanilla extract, and a pinch of salt. Using a hand mixer or whisk, beat the mixture on medium speed until smooth and creamy.

Add Strawberries: Gently fold in the sliced strawberries into the cream cheese mixture, making sure to distribute them evenly throughout the batter.

Prepare the Graham Mixture: In a small bowl, mix the graham cracker crumbs with lemon zest (if using) and set aside.

Assemble the Bark: Line a baking sheet (approximately 9x13 inches) with parchment paper. Pour the cream cheese and strawberry mixture onto the prepared baking sheet, spreading it evenly with a spatula.

Add Toppings: Sprinkle the graham cracker mixture evenly over the top of the cream cheese layer. If desired, add mini chocolate chips for an extra touch of sweetness. Feel free to place a few additional sliced strawberries on top for garnish.

Freeze: Carefully place the baking sheet in the freezer and let it freeze for at least 4 hours, or until completely solid.

Serve: Once frozen, remove the bark from the baking sheet, break it into pieces, and serve immediately. You can store any leftovers in an airtight container in the freezer for up to two weeks.
