2 cups fresh strawberries, hulled and sliced

1 cup coconut milk (or almond milk)

1/4 cup honey or maple syrup (adjust sweetness to taste)

1/4 cup chia seeds

1 teaspoon vanilla extract

A pinch of salt

Extra sliced strawberries or mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a blender, combine the hulled and sliced strawberries and blend until smooth. You can leave a few chunks if you prefer some texture in your popsicle. Set aside a small portion of strawberry puree for layering later, if desired.

    Mix the Chia Pudding Mixture: In a mixing bowl, whisk together the coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt until well combined.

      Combine with Chia Seeds: Stir in the chia seeds to the coconut milk mixture. Allow it to sit for about 10 minutes, then stir again to prevent clumping. Let it sit for another 30 minutes or until the chia seeds have absorbed the liquid and the mixture has thickened.

        Layer the Pops: In your popsicle molds, alternate layers of the chia pudding mixture and the strawberry puree. You can use a spoon to gently swirl them together for a marbled effect, or layer them distinctly for a more visually appealing presentation.

          Insert Sticks: Once the molds are filled, insert popsicle sticks into the center of each mold.

            Freeze: Place the popsicle molds in the freezer for at least 4–6 hours or until completely frozen.

              Unmold and Serve: Once frozen, run warm water over the outside of the molds to help release the pops. Gently pull the popsicles out of the molds and serve immediately, garnished with extra sliced strawberries or a sprig of mint if desired.
