Ingredients

4 medium bell peppers (any color)

1 cup cooked quinoa

1/2 cup diced salami

1/2 cup diced pepperoni

1/4 cup crumbled feta cheese

1/4 cup shredded mozzarella cheese

1/4 cup diced cucumbers

1/4 cup cherry tomatoes, halved

1/4 cup black olives, pitted and sliced

1/4 cup roasted red peppers, diced

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

1 teaspoon Italian seasoning

Optional: assorted crackers or breadsticks for serving

Instructions

Prepare the Bell Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides with olive oil and place them in a baking dish.

Cook the Filling: In a large mixing bowl, combine the cooked quinoa, diced salami, diced pepperoni, feta cheese, mozzarella cheese, cucumbers, cherry tomatoes, black olives, roasted red peppers, and chopped parsley.

Season the Mixture: Drizzle the mixture with olive oil and balsamic vinegar. Season with salt, pepper, and Italian seasoning. Mix everything well until thoroughly combined.

Stuff the Peppers: Generously spoon the filling into each prepared bell pepper. Fill them up to the top, packing the mixture in gently.

Bake the Peppers: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the filling is slightly golden.

Serve: Remove the stuffed peppers from the oven and allow them to cool slightly before serving. Optionally, serve with crackers or breadsticks alongside for an interactive charcuterie board experience.

Enjoy: Dig into your delicious stuffed charcuterie board bell peppers, mixing flavors with every bite!
