Stuffed Mini Bell Peppers

12 mini bell peppers (assorted colors)

1 cup cooked quinoa (or rice)

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup fresh spinach, chopped

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup shredded cheese (cheddar, mozzarella, or a blend)

2 tablespoons olive oil

1 tablespoon lime juice

Fresh cilantro for garnish (optional)

Sour cream or Greek yogurt for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the mini bell peppers and remove the seeds. Arrange them upright in a baking dish.

      Make the Filling: In a large mixing bowl, combine cooked quinoa, black beans, corn, chopped spinach, cumin, smoked paprika, garlic powder, salt, and pepper. Drizzle in olive oil and lime juice and mix well until all ingredients are evenly coated.

        Stuff the Peppers: Carefully spoon the filling mixture into each mini bell pepper, pressing gently to pack it in. Fill them generously to ensure they are well-stuffed.

          Top with Cheese: Sprinkle shredded cheese on top of each stuffed pepper.
