Ingredients

20 large white or cremini mushrooms, stems removed

8 oz (1 block) cream cheese, softened

1 cup grated Parmesan cheese

1/2 cup breadcrumbs (Panko for extra crunch)

2 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1/4 teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon dried Italian herbs (oregano, thyme, or basil)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Prepare the Mushrooms: Clean the mushrooms with a damp cloth and remove the stems. Carefully hollow out the mushrooms if needed, creating a small cavity for your stuffing.

Mix the Filling: In a medium mixing bowl, combine softened cream cheese, grated Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, red pepper flakes (if using), salt, pepper, olive oil, lemon juice, and dried Italian herbs. Mix until well combined and creamy.

Stuff the Mushrooms: Spoon the cream cheese mixture into each mushroom cap, pressing it down slightly to fill each cavity. Leave them heaping, as the filling will puff up a bit while baking.

Arrange and Bake: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, until the mushrooms are tender and the tops are golden brown.

Cool & Serve: Once baked, allow the stuffed mushrooms to cool for a few minutes before plating. Garnish with additional parsley if desired. Serve warm as a delicious appetizer or party snack!
