2 large russet potatoes, peeled and diced

1 cup shredded sharp cheddar cheese

½ cup cream cheese, softened

½ cup green onions, finely chopped

1 clove garlic, minced

1 tsp salt

½ tsp black pepper

1 tsp paprika

1 cup all-purpose flour (plus extra for dusting)

1 large egg

Oil for frying (vegetable or canola)

Instructions
 

Boil Potatoes: Place the diced potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well.

    Prepare Mashed Potatoes: In a mixing bowl, mash the drained potatoes until smooth. Let them cool slightly.

      Mix Fillings: Add the shredded cheddar cheese, cream cheese, chopped green onions, minced garlic, salt, pepper, and paprika into the mashed potatoes. Mix well until fully combined.

        Form Cakes: With clean hands, scoop out about 2 tablespoons of the potato mixture and form it into a patty. Repeat until all the mixture is formed into cakes. You should have about 10-12 cakes.

          Coat with Flour: Dust each potato cake lightly with flour to help them crisp during frying.

            Prepare Drawing Station: In a small bowl, beat the egg. Set up a frying station with the beaten egg, the potato cakes floured, and the frying oil ready.

              Fry Cakes: Heat about ½ inch of oil in a large skillet over medium heat. Dip each potato cake into the egg, allowing excess to drip off, then carefully place in the hot oil. Cook for 3-4 minutes on each side or until golden brown and crispy. Work in batches to avoid overcrowding.
