2 cups mixed salad greens (like spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup colorful bell peppers (red, yellow, and green), chopped

1 cup shredded carrots

1 cup corn kernels (fresh or canned, drained)

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup sunflower seeds or pumpkin seeds

1/4 cup ranch dressing or yogurt-based dressing

Fresh herbs (optional: basil or parsley) for garnish

Instructions
 

Prepare the Veggies: Wash all the salad greens and vegetables thoroughly. Pat the leaves dry with a paper towel and place them in a large salad bowl.

    Chop and Add: Halve the cherry tomatoes, dice the cucumber, and chop the bell peppers into small bite-sized pieces. Add all the chopped veggies (tomatoes, cucumber, bell peppers, and carrots) to the bowl.

      Incorporate Corn: If you're using fresh corn, cook it in boiling water for 5 minutes and then cool. If using canned corn, simply drain and rinse. Add it into the salad bowl.
