Summer Veggie Pizza on Naan

Summer is here, and it's time to savor fresh flavors with a Summer Veggie Delight Naan Pizza! This delightful dish features a crispy naan base topped with seasonal veggies like red bell peppers, zucchini, and cherry tomatoes, all perfectly melted with a blend of mozzarella and goat cheese. Not only is it easy to prepare, but it's also a healthy option that caters to various dietary preferences. Ingredients
  

4 pieces of naan bread

1 cup of marinara sauce (homemade or store-bought)

1 cup of fresh mozzarella cheese, shredded

1/2 cup of goat cheese, crumbled

1 red bell pepper, thinly sliced

1 yellow zucchini, thinly sliced

1 cup of cherry tomatoes, halved

1 cup of baby spinach leaves

1/2 red onion, thinly sliced

2 tablespoons of olive oil

1 teaspoon of Italian seasoning (or to taste)

Salt and black pepper to taste

Fresh basil leaves, for garnish

Preheat the Oven: Preheat your oven to 450°F (232°C). If you have a pizza stone, place it in the oven while it preheats for even cooking.

    Prepare the Naan: Lightly brush the top side of each naan bread with olive oil to enhance crispness while baking.

      Spread Sauce: Spread a generous layer of marinara sauce over the oiled side of each naan, leaving a small border around the edges.

        Add Cheese: Sprinkle a portion of fresh mozzarella over the sauce on each naan, followed by crumbled goat cheese for extra creaminess.

          Layer the Veggies: Evenly distribute the sliced red bell pepper, yellow zucchini, cherry tomatoes, baby spinach, and red onion across each naan pizza. Make sure to scatter the veggies to ensure every bite has a mix.

            Season: Drizzle a little olive oil over the veggies, then sprinkle with Italian seasoning, salt, and black pepper to taste.
