1 cup raw almonds

1 cup Medjool dates, pitted

1/2 cup unsweetened shredded coconut

1/4 cup natural almond butter

2 tablespoons honey or maple syrup (optional)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup dark chocolate chips (optional)

Extra shredded coconut or chopped almonds for rolling (optional)

Instructions
 

Prepare the Almonds: Place the raw almonds in a food processor and pulse until they are finely chopped but not turned into almond flour. Transfer to a mixing bowl.

    Blend the Dates: In the same food processor, add the pitted Medjool dates and pulse until they form a sticky paste. If necessary, you can add a teaspoon of warm water to help with blending.

      Mix Ingredients: In the bowl with the chopped almonds, add the date paste, shredded coconut, almond butter, honey or maple syrup (if using), vanilla extract, ground cinnamon, and salt. Mix everything together until well combined. If you're including dark chocolate chips, fold them in at this point.

        Form the Balls: Use your hands to scoop out a tablespoon of the mixture and roll it into a ball. Continue this process until all the mixture is formed into balls. You should get about 18-24 energy balls depending on the size.

          Coat the Balls (Optional): If you desire, roll the energy balls in additional shredded coconut or chopped almonds for a tasty exterior.

            Chill and Store: Place the energy balls on a baking tray lined with parchment paper and refrigerate for at least 30 minutes to firm them up. Once set, transfer them to an airtight container. Store in the fridge for up to a week or freeze for longer-lasting snacks.
