For the Chicken:

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup cornstarch

2 large eggs, beaten

1/4 tsp salt

1/4 tsp black pepper

Vegetable oil, for frying

For the Sweet and Sour Sauce:

1/2 cup ketchup

1/2 cup apple cider vinegar

1/3 cup brown sugar, packed

1/4 cup honey

1 tbsp soy sauce

1 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp ginger powder

For the Stir-Fry:

1 tbsp vegetable oil

1 red bell pepper, diced

1 green bell pepper, diced

1/2 cup pineapple chunks (fresh or canned)

1 small onion, diced

2 cloves garlic, minced

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prep the Chicken: Season the chicken pieces with salt and pepper. Dredge each piece in cornstarch, shaking off excess, then dip into the beaten eggs.

    Fry the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken in batches. Fry until golden brown and cooked through, about 5-7 minutes per batch. Remove chicken and drain on paper towels.

      Make the Sauce: In a bowl, whisk together ketchup, apple cider vinegar, brown sugar, honey, soy sauce, Worcestershire sauce, garlic powder, and ginger powder until well combined.

        Stir-Fry the Vegetables: In the same skillet, add a tablespoon of vegetable oil over medium heat. Sauté the onions, garlic, and bell peppers until tender, about 3-4 minutes. Then, add the pineapple chunks and cook for an additional 2 minutes.

          Combine: Pour the sweet and sour sauce over the vegetables and let it simmer for about 3 minutes, stirring occasionally.

            Add Chicken: Gently fold in the fried chicken pieces and toss everything until the chicken is well coated in the sauce. Cook for an additional 2 minutes to heat through.

              Garnish and Serve: Once heated, remove from heat and garnish with sliced green onions and a sprinkle of sesame seeds. Serve hot over steamed white rice or fried rice.
