Sweet and Spicy Baked Cauliflower

1 large head of cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/4 cup honey

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon apple cider vinegar

1 tablespoon sesame oil

1 teaspoon grated fresh ginger

Chopped green onions, for garnish

Sesame seeds, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup and to prevent sticking.

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. Toss well until all florets are evenly coated.

      Bake the Cauliflower: Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the florets are tender, flipping them halfway through for even cooking.

        Make the Glaze: While the cauliflower is baking, prepare the sweet and spicy glaze. In a small saucepan over medium heat, combine honey, soy sauce, apple cider vinegar, sesame oil, and grated ginger. Stir continuously until the mixture simmers and is well-combined, about 3-4 minutes. Remove from heat.

          Glaze the Cauliflower: Once the cauliflower is done baking, transfer it to a large mixing bowl and pour the warm honey glaze over the florets. Toss gently to coat all the pieces evenly.

            Final Bake: Return the glazed cauliflower to the baking sheet and bake for an additional 5-10 minutes until the glaze is caramelized and bubbly.
