1 lb (450g) boneless chicken thighs, sliced thinly

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 cup snap peas, trimmed

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon Sriracha (adjust to taste)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

2 green onions, sliced, for garnish

Sesame seeds, for garnish

Instructions
 

Prepare the Chicken: In a bowl, combine the sliced chicken thighs with 1 tablespoon of soy sauce, 1 tablespoon of honey, and a bit of Sriracha. Allow it to marinate for at least 15 minutes while you prepare the vegetables.

    Heat the Oil: In a large wok or skillet, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Chicken: Add the marinated chicken to the wok in a single layer. Let it sear for about 3-4 minutes without stirring, allowing it to brown nicely. Then stir-fry for an additional 2-3 minutes until the chicken is cooked through. Remove the chicken from the wok and set it aside.

        Sauté the Vegetables: In the same wok, add the garlic and ginger, sautéing for about 30 seconds until fragrant. Add the bell peppers, broccoli, and snap peas. Stir-fry the vegetables for 4-5 minutes until they are vibrant and slightly tender but still crisp.

          Make the Sauce: In a small bowl, mix together the remaining soy sauce, honey, Sriracha, rice vinegar, and sesame oil. Pour this sauce over the vegetables in the wok. Stir to coat the veggies evenly.

            Thicken the Sauce: Add the cornstarch-water mixture to the wok and stir well. Allow the sauce to bubble and thicken for about 1-2 minutes, ensuring everything is well combined.

              Combine and Serve: Return the cooked chicken to the wok, tossing everything together until the chicken is heated through and glazed with the sauce. Remove from heat.
