Sweet Chili Glazed Chicken Pita Wraps

1 pound boneless, skinless chicken thighs

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon minced garlic

1 teaspoon freshly grated ginger

4 whole wheat pita breads

1 cup shredded cabbage (green or purple)

1/2 cup grated carrots

1/2 cucumber, thinly sliced

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Salt and pepper, to taste

Cooking oil (for frying)

Instructions
 

Marinate the Chicken: In a large bowl, mix together the sweet chili sauce, soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably up to 2 hours.

    Cook the Chicken: Heat a skillet over medium-high heat and add a drizzle of cooking oil. Remove the chicken from the marinade, allowing excess marinade to drip off. Season lightly with salt and pepper. Cook the chicken thighs in the skillet for about 6-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F). Remove from heat and let rest for a couple of minutes before slicing into strips.

      Prepare the Pita Wraps: While the chicken is resting, warm the whole wheat pita breads in a dry skillet for about 1-2 minutes on each side or until soft and pliable. Alternatively, you can microwave them for about 20-30 seconds.
