Ingredients

2 cups raw almonds (whole)

1 cup dark chocolate chips (or chopped dark chocolate)

¼ cup unsweetened cocoa powder

2 tablespoons coconut oil

¼ cup maple syrup (or honey)

1 teaspoon vanilla extract

Sea salt, for sprinkling (optional)

½ cup shredded coconut (optional)

Instructions

Prep the Almonds: Begin by preheating your oven to 350°F (175°C). Spread the raw almonds onto a baking sheet in a single layer. Toast them in the oven for about 10-12 minutes until they are slightly golden and fragrant. Remove from the oven and let them cool for a few minutes.

Melt the Chocolate: In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Heat in the microwave in 30-second increments, stirring in between until the chocolate is fully melted and smooth. Alternatively, use a double boiler on the stovetop.

Add Sweetness: Once the chocolate is melted, stir in the maple syrup and vanilla extract until well combined.

Combine: In a large bowl, add the toasted almonds (and shredded coconut if using) to the chocolate mixture. Mix gently until the almonds are fully coated.

Form Clusters: Using a tablespoon or your hands, scoop out small portions of the chocolate-covered almond mixture and place them onto a lined baking sheet. Form small clusters, about 2 inches apart.

Sprinkle with Sea Salt: If desired, sprinkle a pinch of sea salt over each cluster for a sweet-salty flavor burst.

Chill to Set: Place the baking sheet in the refrigerator for about 30 minutes to allow the chocolate to harden completely.

Serve: Once set, remove the chocolate almond clusters from the fridge and enjoy! Store any leftovers in an airtight container in a cool place or in the fridge for up to one week.
