Sweet Corn and Bacon Fritter Cakes

Ingredients
  

2 cups sweet corn (fresh or frozen)

4 slices of bacon, chopped

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

½ cup milk

1 tablespoon honey (optional)

¼ cup chopped green onions (scallions)

½ cup shredded cheddar cheese (optional)

Olive oil or butter for frying

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove from skillet and drain on paper towels. Reserve about 1 tablespoon of bacon fat in the skillet for cooking the fritters.

    Prepare the Batter: In a mixing bowl, combine the flour, baking powder, baking soda, salt, and black pepper. Whisk the dry ingredients together.

      Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, and honey (if using) until well mixed.

        Mix Ingredients: Pour the wet mixture into the dry mixture and stir until just combined. Fold in the sweet corn, cooked bacon, chopped green onions, and cheddar cheese until evenly distributed.

          Heat the Skillet: In the same skillet used for bacon, add enough olive oil or butter to coat the bottom and heat over medium-high heat.

            Cook the Fritters: Using a tablespoon or a small ice cream scoop, drop the batter onto the hot skillet, flattening them slightly with the back of the spoon. Cook for 3-4 minutes on each side or until golden brown and crispy. Don’t overcrowd the pan; you may need to do this in batches.

              Drain: Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.

                Serve: Enjoy the fritter cakes warm, garnished with additional green onions or a dollop of sour cream or yogurt on the side.
