Ingredients

2 cups frozen sweet corn kernels (thawed if necessary)

1 cup canned green chiles, drained and chopped

2 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon salt

½ teaspoon cayenne pepper (optional, for a kick)

½ cup cold unsalted butter, cubed

1 cup buttermilk

1 cup shredded cheddar cheese (plus more for topping)

1 tablespoon chopped fresh cilantro (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9x13 inch baking dish with non-stick spray or butter.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and cayenne pepper until well combined.

Cut in Butter: Add the cubed cold butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs.

Mix in Wet Ingredients: Stir in the buttermilk gently until just combined. Be careful not to overmix; a few lumps are fine.

Fold in Corn and Chiles: Gently fold in the sweet corn, green chiles, and 1 cup of shredded cheddar cheese, ensuring an even distribution without overworking the dough.

Transfer to Baking Dish: Scoop the biscuit mixture into the prepared baking dish, spreading it out evenly. Top with additional shredded cheddar cheese.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Garnish: Allow the bake to cool for about 5 minutes. Garnish with fresh cilantro before serving.

Serve and Enjoy: Cut into squares and serve warm. This savory dish pairs wonderfully with a side salad or can be enjoyed as a comforting standalone dish.
