1/2 cup all-purpose flour

1/4 cup cornmeal

1/4 cup grated Parmesan cheese

1/2 teaspoon baking powder

1/4 teaspoon cayenne pepper (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg, beaten

1/4 cup milk

2 tablespoons chopped fresh cilantro (or parsley)

4 slices of your favorite bread (sourdough or whole wheat work well)

4 slices of cheese (cheddar or mozzarella recommended)

Avocado slices for topping

Olive oil for frying

Make the Corn Fritters: In a medium-sized mixing bowl, combine fresh corn kernels, flour, cornmeal, Parmesan cheese, baking powder, cayenne pepper (if using), salt, and black pepper. Stir to mix the dry ingredients thoroughly.

    Mix the Wet Ingredients: In a separate bowl, whisk together the beaten egg and milk. Pour the wet mixture into the dry ingredients and gently fold until just combined. Add the chopped cilantro and mix briefly until incorporated.
