2 medium-sized apples, peeled, cored, and chopped (about 2 cups)

1/2 cup honey (or maple syrup for a vegan option)

1 1/2 cups almond milk (or any milk of choice)

2 large eggs (or 1/2 cup unsweetened applesauce for a vegan option)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans)

Optional: 1/4 cup raisins or dried cranberries

Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish or line it with parchment paper for easy removal.

    Prepare the base: In a large mixing bowl, combine the rolled oats, chopped apples, honey, almond milk, eggs (or applesauce), vanilla extract, cinnamon, nutmeg, baking powder, and salt. Mix until all ingredients are well combined.
