Sweet Potato and Kale Gratin

2 large sweet potatoes, peeled and thinly sliced

4 cups of kale, stems removed and chopped

1 medium onion, thinly sliced

3 cloves of garlic, minced

1 cup of heavy cream

1 cup of vegetable broth

1 teaspoon of thyme (fresh or dried)

1 teaspoon of nutmeg

1 cup of grated Gruyère cheese (or any cheese of your choice)

Olive oil

Salt and pepper, to taste

½ cup of grated Parmesan cheese for topping

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Kale and Onion: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onion and a pinch of salt. Sauté until the onions become translucent, about 5 minutes. Add the chopped kale and minced garlic. Cook for another 3-4 minutes until the kale is wilted. Remove from heat and set aside.

      Prepare the Cream Mixture: In a mixing bowl, whisk together the heavy cream, vegetable broth, thyme, nutmeg, and a sprinkle of salt and pepper.

        Layer the Ingredients: In a large baking dish, start layering half of the sliced sweet potatoes at the bottom. Follow with half of the sautéed kale and onion mixture, then pour over half of the cream mixture. Repeat the layers with the remaining sweet potatoes, kale mixture, and finish with the remaining cream.

          Cheese it Up: Sprinkle the grated Gruyère cheese evenly on top.

            Add Toppings: Finally, add the grated Parmesan cheese over the top for a delightful crust.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After this time, remove the foil and bake uncovered for an additional 20-25 minutes, or until the sweet potatoes are tender and the top is golden brown and bubbly.

                Let it Rest: Once baked, remove from the oven and let it sit for about 10 minutes to allow the gratin to set before serving.

                  Serve and Enjoy: Cut into squares and serve warm, garnished with a sprinkle of extra thyme if desired!
