Sweet Potato Feta & Spinach Tart

1 large sweet potato, peeled and cubed

2 tablespoons olive oil

Salt and pepper, to taste

1 onion, finely chopped

2 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 teaspoon dried thyme

1 teaspoon dried oregano

4 large eggs

1 cup feta cheese, crumbled

1 cup heavy cream

1 pre-made pie crust (9-inch)

1 tablespoon fresh lemon juice

Zest of 1 lemon

Instructions
 

Prepare the Sweet Potato: Preheat your oven to 400°F (200°C). In a large bowl, toss the cubed sweet potato with 1 tablespoon of olive oil, salt, and pepper. Spread it out on a baking sheet and roast for about 20-25 minutes until tender and lightly caramelized. Once cooked, set aside to cool slightly.

    Sauté the Vegetables: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the garlic and sauté for an additional minute until fragrant. Stir in the spinach, thyme, and oregano, cooking until the spinach wilts, about 3-4 minutes. Remove from heat and let it cool.

      Prepare the Filling: In a large mixing bowl, whisk together the eggs, heavy cream, lemon juice, and lemon zest. Season with a little salt and pepper. Stir in the roasted sweet potatoes, sautéed spinach mixture, and crumbled feta until fully combined.

        Assemble the Tart: Preheat your oven to 375°F (190°C). Place the pre-made pie crust in a tart or pie pan, pressing down gently. Pour the filling mixture into the crust, smoothing the top with a spatula.

          Bake the Tart: Bake in the preheated oven for 35-40 minutes or until the tart is set in the middle and the top is slightly golden. The filling should jiggle slightly but should not be liquid. Allow it to cool for 10 minutes before slicing.
