Sweet Soy Glazed Mahi Mahi

4 Mahi Mahi fillets (6 oz each)

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame seeds (for garnish)

2 green onions, chopped (for garnish)

Salt and pepper to taste

Cooked jasmine rice or quinoa (for serving)

Instructions
 

Marinade Preparation: In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger to create a marinade.

    Marinate Mahi Mahi: Place the Mahi Mahi fillets in a shallow dish and pour the marinade over them. Let the fish marinate for at least 30 minutes in the refrigerator (up to 2 hours for more flavor).

      Preheat the Grill/Pan: Heat a grill or non-stick skillet over medium heat. Lightly oil the grill grates or pan to prevent sticking.

        Cook Mahi Mahi: Remove the fillets from the marinade and let any excess drip off. Season with salt and pepper. Grill or sear the fillets for about 4-5 minutes per side, until cooked through and flaky. The internal temperature should reach 145°F (63°C).

          Create the Glaze: Meanwhile, in a small saucepan, combine the remaining marinade (about 1/4 cup) with cornstarch and water. Bring to a gentle boil over medium heat, whisking continuously until thickened, about 2-3 minutes.

            Serve: Plate the cooked Mahi Mahi and generously drizzle the sweet soy glaze over each fillet. Garnish with sesame seeds and chopped green onions.

              Enjoy: Serve immediately alongside jasmine rice or quinoa to soak up the glaze.
