Sweet & Spicy BBQ Tofu Wraps

Ingredients
  

1 block (14 oz) firm tofu, drained and pressed

1 cup BBQ sauce (store-bought or homemade)

2 tablespoons honey or maple syrup (for a vegan option)

1 tablespoon soy sauce

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cayenne pepper (adjust to taste)

2 large whole wheat or spinach tortillas

1 cup mixed greens (spinach, arugula, etc.)

1 cup sliced bell peppers (red, yellow, and green for color)

½ cup shredded carrots

¼ cup sliced red onion

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Tofu: Begin by cutting the pressed tofu into thick slices (about ½ inch). You can choose to also cube the tofu for a different texture.

    Make the Marinade: In a bowl, whisk together the BBQ sauce, honey or maple syrup, soy sauce, smoked paprika, garlic powder, and cayenne pepper. Reserve ¼ cup of the mixture for later use.

      Marinate the Tofu: In a shallow dish, place the tofu slices and pour the marinade over them, making sure each piece is well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

        Cook the Tofu: Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated tofu slices and cook for about 5-7 minutes on each side until they acquire a nice char and are heated through. Brush with the reserved marinade while cooking for added flavor.

          Assemble the Wraps: Lay a tortilla flat on a clean surface. Place a generous handful of mixed greens in the center, followed by the grilled tofu slices, sliced bell peppers, shredded carrots, and red onion.

            Wrap it Up: Fold in the sides of the tortilla, then roll from the bottom to encase the filling securely. Repeat with the second tortilla.

              Serve: Slice each wrap in half and serve with any remaining BBQ sauce on the side. Garnish with fresh cilantro if desired.
