Thai Peanut Chicken Skewers

1 pound chicken breast, cut into bite-sized pieces

¼ cup soy sauce

2 tablespoons lime juice

2 tablespoons brown sugar

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon ginger, grated

1 teaspoon red pepper flakes (adjust to taste)

½ cup creamy peanut butter

¼ cup coconut milk

2 tablespoons hoisin sauce

1 tablespoon sriracha (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Skewers (soaked in water for 30 minutes if using wooden ones)

Instructions
 

Marinate the Chicken:

    In a medium bowl, combine soy sauce, lime juice, brown sugar, sesame oil, minced garlic, ginger, and red pepper flakes. Add the chicken pieces and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours for more flavor.

      Prepare the Peanut Sauce:

        In a separate bowl, whisk together peanut butter, coconut milk, hoisin sauce, and sriracha (if using) until smooth. Adjust the consistency by adding a little more coconut milk if needed. Set aside.

          Skewer the Chicken:

            Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.

              Grill the Skewers:

                Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Make sure to use a meat thermometer; the internal temperature should reach 165°F (75°C).

                  Serve:
