Ingredients

3 cups rolled oats

1 cup unsweetened shredded coconut

1 cup mixed nuts (almonds, cashews, and pecans)

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dried fruits (raisins, cranberries, or mango pieces)

1/4 cup chia seeds or flaxseeds (optional)

Instructions

Preheat the oven: Start by preheating your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

Mix dry ingredients: In a large bowl, combine the rolled oats, shredded coconut, mixed nuts, cinnamon, salt, and chia seeds (if using). Stir well to ensure everything is evenly distributed.

Combine wet ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.

Combine wet and dry mixtures: Pour the wet mixture over the dry ingredients and mix thoroughly until all the dry ingredients are evenly coated.

Spread on baking sheet: Transfer the mixture onto the prepared baking sheet and spread it out evenly, pressing it down gently to create clusters.

Bake: Bake in the preheated oven for 20-25 minutes, stirring halfway through, until golden brown. Keep a close eye on it to avoid burning.

Add dried fruits: Once baked, remove from the oven and let it cool for about 10 minutes. While still warm, stir in the dried fruits of your choice.

Cool and cluster: Allow the granola to cool completely on the baking sheet. As it cools, it will harden into clusters. Once cooled, break it into clusters and store them in an airtight container.

Enjoy: Serve your Toasty Coconut Granola Clusters as a snack, topping for yogurt, or with milk for breakfast.
