Ingredients
  

4 cups ripe tomatoes, chopped (about 6-8 medium)

1/4 cup finely chopped onion

1/4 cup finely chopped celery

1/4 cup finely chopped green bell pepper

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon Worcestershire sauce

1 tablespoon lemon juice

2 tablespoons granulated gelatin (2 packets)

1/2 cup cold water

1 cup vegetable broth or tomato juice

Fresh herbs (basil, parsley, or dill) for garnish

Instructions
 

Prepare the Tomato Mixture: In a large pot, combine the chopped tomatoes, onion, celery, green bell pepper, salt, black pepper, Worcestershire sauce, and lemon juice. Simmer over medium heat for about 15-20 minutes until the tomatoes have broken down. Stir occasionally to prevent sticking.

    Strain the Mixture: Once the tomato mixture is ready, strain it through a fine sieve into a large bowl to extract the liquid while discarding the solids. You should have about 4 cups of liquid.

      Dissolve the Gelatin: In a small bowl, sprinkle the granulated gelatin over cold water. Let it sit for about 5 minutes to bloom. After blooming, gently heat it in the microwave for about 10 seconds, or until fully dissolved.

        Combine and Mix: Pour the dissolved gelatin into the strained tomato liquid. If you're using vegetable broth instead of tomato juice, mix it in now, and stir until fully combined. Taste and adjust seasoning if necessary.

          Set the Aspic: Pour the mixture into a large mold or individual serving cups. Tap gently to remove air bubbles and ensure an even surface. Cover with plastic wrap and refrigerate for at least 4 hours, or until set solid.

            Unmold and Serve: Once fully set, carefully run a knife around the edges of the mold to loosen it. Invert onto a serving platter and gently shake to release the aspic. Garnish with fresh herbs before slicing into wedges or serving in cups.
