Ingredients

4 medium zucchinis

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

2 cloves garlic, minced

1/4 cup fresh basil, chopped

1/4 cup balsamic glaze

1 tablespoon olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

Instructions

Preheat the oven to 375°F (190°C).

Prepare the zucchini: Slice the zucchinis in half lengthwise and scoop out the seeds using a spoon, creating a hollowed-out boat. Place the zucchini halves on a baking sheet.

Mix the filling: In a medium bowl, combine the cherry tomatoes, feta cheese, minced garlic, fresh basil, olive oil, salt, pepper, and red pepper flakes. Stir until well combined.

Stuff the zucchini: Generously spoon the tomato mixture into each zucchini boat, pressing down gently to pack the filling.

Bake: Drizzle the stuffed zucchinis with balsamic glaze and place them in the preheated oven. Bake for 25-30 minutes, or until the zucchinis are tender and the filling is slightly golden on top.

Garnish and serve: Remove from the oven and let cool for a few minutes. Drizzle with additional balsamic glaze, if desired, and garnish with extra fresh basil before serving.
