Tomato Mozzarella Puff Pastries

1 sheet of puff pastry (thawed if frozen)

2 large ripe tomatoes (sliced)

8 oz fresh mozzarella cheese (sliced)

1/4 cup fresh basil leaves (torn)

1 tablespoon balsamic glaze

1 egg (beaten, for egg wash)

Salt and pepper (to taste)

Olive oil (for drizzling)

Flaky sea salt (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to smoothen it and cut it into 4 equal squares.

      Create the Border: Using a sharp knife, lightly score a border about 1/2 inch from the edges of each pastry square. Be careful not to cut all the way through. This will create a nice edge that puffs up when baked.

        Layer the Ingredients: Place a slice of mozzarella in the center of each pastry square. Top with a slice of tomato, and then add a few torn basil leaves. Season with salt and pepper to taste.

          Add Balsamic Glaze: Drizzle a small amount of balsamic glaze over the tomatoes and mozzarella.

            Brush with Egg Wash: Carefully brush the edges of the pastry squares with the beaten egg to give them a golden color as they bake.

              Drizzle Olive Oil: Lightly drizzle some olive oil over the top of the tomatoes and mozzarella for extra flavor.

                Bake: Place the prepared pastries in the preheated oven and bake for about 20-25 minutes, or until the pastry is golden brown and puffed.

                  Finish with Sea Salt: Once out of the oven, sprinkle with flaky sea salt and let cool for a few minutes.
