Tomato Peach Salsa Chicken

4 boneless, skinless chicken breasts

2 medium ripe tomatoes, diced

1 large ripe peach, diced

½ red onion, finely chopped

1 jalapeño, seeds removed and finely chopped (optional, for heat)

½ cup fresh cilantro, chopped

Juice of 1 lime

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Lime wedges, for serving

Prepare the Salsa: In a medium bowl, combine the diced tomatoes, diced peach, red onion, jalapeño, cilantro, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Mix well, then set aside to allow the flavors to meld.

    Tenderize the Chicken: Gently pound the chicken breasts to an even thickness using a meat mallet or rolling pin. This will help them cook evenly.

      Season the Chicken: In a small bowl, mix 1 tablespoon of olive oil, cumin, smoked paprika, salt, and pepper. Rub this mixture over both sides of the chicken breasts.

        Cook the Chicken: Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/74°C).
