2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 cup chopped walnuts (optional)

1/2 cup raisins (optional)

Cream cheese frosting (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan to prevent sticking.

Mix Wet Ingredients: In a large mixing bowl, combine the canned tomato soup, granulated sugar, vegetable oil, eggs, and vanilla extract. Whisk until well blended and smooth.

Combine Dry Ingredients: In another bowl, sift together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

Combine Mixtures: Gradually add the dry ingredients to the tomato soup mixture, mixing until just combined. Be careful not to overmix. If using walnuts and raisins, fold them in gently.

Bake the Cake: Pour the batter into the prepared baking pan. Smooth the top with a spatula. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cake: Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Transfer the cake to a wire rack to cool completely.

Frosting: Once the cake is completely cooled, spread a generous layer of cream cheese frosting on top.

Serve and Enjoy: Cut the cake into squares and serve it as a unique dessert that’s sure to surprise your guests!
