6 large flour tortillas

8 large eggs

1 cup whole milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (red, green, or yellow)

1 cup cooked and crumbled breakfast sausage (or diced vegetables for a vegetarian option)

1 small onion, finely chopped

1 tsp garlic powder

1 tsp cumin

½ tsp paprika

Salt and pepper to taste

¼ cup chopped fresh cilantro (for garnish, optional)

Salsa (for serving, optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, cumin, paprika, salt, and pepper until well combined. Set aside.

      Spray a 9x13 inch baking dish with non-stick cooking spray or lightly oil it to prevent sticking.

        Place one tortilla in the bottom of the dish, spreading it out to cover as much surface area as possible. You can tear a tortilla to fill in gaps if necessary.

          Spread a layer of the cooked breakfast sausage (or vegetables) evenly over the tortilla, followed by a portion of the bell peppers and onion.

            Sprinkle a layer of shredded cheddar cheese over the vegetables.

              Repeat the layers by adding another tortilla on top and repeating steps 4 through 6 until you have used all the ingredients, finishing with a final tortilla layer topped with remaining cheese.

                Pour the egg mixture evenly over the stacked tortillas in the baking dish, ensuring all layers are soaked in the egg mix.

                  Gently press down on the tortillas to help them absorb the liquid evenly.

                    Cover the baking dish with aluminum foil and place it in the preheated oven for 30 minutes.

                      After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the quiche is set in the center.

                        Let it cool for a few minutes before slicing. Garnish with chopped fresh cilantro, if desired, and serve with salsa on the side.
