1/2 cup chia seeds

2 cups coconut milk (or almond milk)

2 tablespoons maple syrup or honey

1 teaspoon vanilla extract

1 cup diced fresh pineapple

1 cup diced mango

1 ripe banana, sliced

1/2 cup toasted coconut flakes

1/4 cup chopped nuts (almonds or cashews)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Chia Pudding:

    - In a mixing bowl, combine the chia seeds, coconut milk, maple syrup (or honey), and vanilla extract. Whisk together until well combined.

      - Allow the mixture to sit for about 5 minutes, then whisk again to break up any clumps of chia seeds.

        - Cover the bowl and refrigerate for at least 4 hours, or overnight, until the chia seeds have expanded and the mixture has thickened to a pudding-like consistency.

          Prepare the Fruit:

            - While the chia pudding is chilling, peel and dice the fresh pineapple and mango. Slice the banana and set aside.

              Assemble the Parfaits:
